3 Granny Smith apples + 125g melted butter + 1&1/2 cups self-raising flour + 3/4 cup sugar (I use brown Sugar & push through a sift) + 1 egg + 1 teaspoon vanilla (I use pure vanilla extract) + 1 x box fresh raspberries.

METHOD: I use a tart tin with a removable bottom. Spray oil. Line baking paper. Pre-heat oven 180 degrees. Peel & slice apples & steam - then drain on kitchen paper to remove excess water.Melt the butter, then add to the sifted flour, sugar & vanilla. Beat with the wooden spoon. Press 3/4 into the tart tin. Save the remaining 1/4 for later.Spread the apple - gently, scatter raspberries & drop remaining cake mixture over the top.

Bake 40 mins + or mins 5 mins. I put a timer on - mostly it cooks about 42 mins. Check firm.Rest. Push out of tin & Sift icing sugar.
